HIGHLY UNSATURATED FATTY ACIDS (HUFA)

Definition

Fatty acids with greater than two carbon double bonds (unsaturated). Fish usually have high amounts of HUFA (such as 20:5w3 and 22:6w3) in their tissues. Dietary lipids such as HUFA are important sources of energy, and should be included in fish diets. These are usually found in nature in fish and vegetable sources.
