FLAT FISH

Definition

Used mainly for fishes belonging to the order Pleuronectiformes, characterised by bilateral assymmetry, with symmetrical larvae which undergo considerable morphological restructuring of the head and skeleton during metamorphosis. The most commonly occurring European species are turbot (Scophthalmus maximus), plaice (Pleuronectes platessa), dab (Limanda limanda), halibut (Hippoglossus hippoglossus) and sole (Solea solea). Turbot and halibut are cultured in Europe while other, flatfish species are cultured in Asia.
