FATTY ACID

Definition

Organic aliphatic acid; typically composed of unbranched chains with an even number of carbon atoms. Over 40 fatty acids are found in nature. Their physical, chemical and nutritional properties are determined by the number of carbon atoms in the molecule and the number and positioning of double bonds between carbon atoms. Fatty acids may be saturated, monounsaturated or polyunsaturated.
